近年来,因环境污染、农药兽药残留超标、添加剂滥用、贮藏不当等因素带来的食品安全问题受到了人们的广泛关注.快速检测技术简便、快速、高效、经济,能较好地满足食品初筛检测的要求.本文综述厂酶抑制速测法、生物传感器法和免疫速测法等食品安全快速检测方法的研究进展,并展望了其发展方向.
